A delicate dumpling of lobster and shrimp, immersed in a silky halibut consommé infused with morchella mushrooms, ginger, and aromatic green onion oil.

Silken Threads & Embered Glaze
Cold Salad Noodles with BBQ Chicken in Chef Ivan’s Special Sauce, Peanut-Sesame Dressing, Fenugreek Microgreens & Fresh Cucumber
A nostalgic nod to Chef Ivan’s childhood, this dish features chilled Hong Kong-style noodles in a silken sesame-peanut sauce, topped with tender BBQ chicken glazed in his signature sauce, fresh cucumber for a spring-like refreshment, and finished with fresh fenugreek microgreens.


Second Course

Golden Duck Legacy
Chef Ivan Chan’s Award-Winning Deconstructed Peking Duck Supreme
A refined reimagining of Chef Ivan’s Canadian Culinary Championship Gold Medal dish: creamy parfait of Peking duck and Cantonese shrimp paste, layered with golden kimchi beurre blanc, soft quail egg, fresh cucumber, and finished with lacquered Peking duck and an optional crown of caviar.


Main Course

Velvet Bliss
Sweet Soy-Braised Pork Belly with Celeriac Purée, Pickled Daikon, Garlic Crumble & Preserved Olive Green Beans
Melt-in-your-mouth pork belly braised in sweet soy, resting on velvety celeriac purée, paired with pickled daikon, crispy garlic crumble, and wok-tossed green beans with preserved olive.
