Course I – Lotus Blossom (Lotus Root Taco)

Lotus Root Taco with Shrimp Paste & Hoisin Lime Aioli Crisp and light with subtle umami and bright citrus notes, this dish awakens the palate and sets the stage for the journey ahead.

Paired with Grand Pré Tidal Bay

Tidal Bay’s crisp acidity and mineral character highlight the freshness of the lotus root, while citrus and green notes enhance the aioli. Its light profile complements the delicate textures without overpowering them.



Course II – Fire & Silk (Mapo Tofu Dumpling)

Mapo Tofu Dumpling with Chili Oil emulsion & Pickled Daikon Cubes
Silky, savory dumplings kissed by chili oil, balanced by the tangy crunch of pickled daikon. Spicy, complex, and full of character.
